Keemun — often called Qimen Hongcha in Chinese — is the pinnacle of congou black tea. Alongside Darjeeling and Uva, it ranks among the world’s three great high-aroma black teas[1]. Its soul is a composite fragrance known as Keemun aroma — rose, honey and orchid woven together, as though the spring of an Anhui mountain valley had been sealed inside the leaf.

The craft has only four core steps: withering softens the leaf and awakens enzymes; rolling breaks cell walls and curls the strip; fermentation (enzymatic oxidation) turns the leaf red and builds aroma; and drying (firing) halts enzyme activity and fixes the fragrance. Each step’s temperature, timing and pressure determines whether the final cup delivers rose or honey, depth or delicacy[2].

What makes this tea special

Keemun’s identity begins with place and cultivar. Qimen County sits in southern Anhui, in the transition zone between the Huangshan Mountains and the Poyang Lake plain, at 300–800 m elevation. The annual mean temperature is about 15.5 °C, rainfall exceeds 1,700 mm, and persistent mist, high humidity and wide day–night temperature swings favour the accumulation of amino acids and aromatic compounds[1].

The dominant cultivar is Zhuye (Camellia sinensis var. sinensis cv. Zhuye) — a medium-small-leaf population rich in terpenoid aroma precursors, especially geraniol and linalool, which form the biochemical foundation of Keemun aroma[2]. Modern plantations also use clonal selections such as Qimen cultivar for higher yield and consistency.

Historically, Keemun black tea was created in 1875 by local merchants Hu Yuanlong and Yu Ganchen, who adapted Fujian congou techniques to the local Zhuye leaf. It won a gold medal at the 1915 Panama–Pacific International Exposition and became a flagship of Chinese black-tea exports to Europe and America, earning the nickname “the champagne of black teas”[3].

Plucking is also critical. Special-grade Keemun uses one bud and two just-unfolding leaves, picked between Qingming and Guyu (early to mid April). After winter dormancy, the plant’s amino acid reserves are at their peak and the polyphenol-to-aroma ratio is balanced, giving the best material for Keemun aroma[4].

Of these, withering, rolling, fermentation and drying (primary and final) are the most quality-critical and are explored in detail below.

Withering: moisture loss and enzyme awakening

Withering is where Keemun flavour begins. Fresh leaves are spread in thin layers on bamboo mats or withering troughs, 3–5 cm deep, for 6–14 hours depending on weather and equipment, reducing moisture from about 75% to 58–65%[1][4].

Traditionally, Qimen producers rely on natural indoor withering, exploiting the mountain’s cool, well-ventilated climate for slow moisture loss. Modern factories use warm-air withering troughs at 28–32 °C, cutting the time to 4–8 hours, though the resulting aroma is slightly less delicate than the natural method[4].

During withering, leaf cells gradually lose water, cell-membrane permeability increases, and the previously separated polyphenol oxidase (PPO) and catechins begin to meet. Proteins hydrolyse into amino acids and starch converts to soluble sugars, laying the groundwork for the sweet, mellow taste that follows. Research shows that moderate withering significantly promotes the hydrolysis of terpenoid glycoside precursors, releasing free geraniol and linalool and directly lifting the floral base of Keemun aroma[2].

Under-withered leaf retains too much grassiness and astringency and ferments unevenly; over-withered leaf loses fragrance and yellows.

Rolling: breaking cells and shaping

Withered leaves move to a rolling machine, following a light–heavy–light pressure pattern for 60–90 minutes[4]. Because Keemun uses relatively tender leaf, rolling must not be too aggressive — excessive juice extrusion and broken strips lead to uncontrolled, overly rapid oxidation.

Rolling serves three purposes:

  1. Cell breakage: releases cell sap so PPO and substrate can meet, creating the oxidation interface;
  2. Strip formation: the leaf is twisted and curled into tight, fine strips — the very meaning of “congou” (工夫), which denotes painstaking craftsmanship;
  3. Uniform mixing: enzymes, substrates and oxygen are evenly distributed, leading to consistent fermentation.

The sign of proper rolling: cell breakage rate around 70–85%, strips tight and slightly sticky with juice but not dripping, leaf colour shifting from dull green to dark red and the grassy note fading into a faint sweetness.

Fermentation (in tea terminology, enzymatic oxidation) is the heart of black tea’s “reddening” and aroma building. Rolled leaves are spread in bamboo baskets or fermentation rooms, 8–15 cm deep, at 22–28 °C and 90–95% relative humidity, for 3–6 hours[1][4].

Here, PPO catalyses the oxidation of catechins into o-quinones, which couple and polymerise into theaflavins and thearubigins — the former giving brightness and briskness to the liquor, the latter contributing the red, rich colour and mellow body[5]. Under-fermentation yields a yellowish liquor and lingering green notes; over-fermentation produces a dull brown colour, flat aroma and thin taste.

Keemun fermentation demands particular attention to “moderation”. The tea maker watches the leaf colour and aroma closely: green → yellow-red → red-brown, with grassiness fading into floral and ripe-fruit notes, signals the right moment to stop. Because Zhuye leaf is rich in terpenoid precursors, enzymatic hydrolysis and oxidation during fermentation generate large amounts of geraniol, linalool and phenylacetaldehyde — the rose, orchid and honey trio that defines Keemun aroma[2].

Core step deep dive: drying (primary and final)

Drying is the last step in Keemun processing and the key to fixing aroma and halting enzyme activity. Keemun uses a two-stage drying method — “primary firing, cooling, final firing” — distinct from Lapsang Souchong’s pine-smoke roasting. Keemun is dried over charcoal or electric heat without pine smoke, so its aroma is cleaner and more floral[4].

Primary firing (initial drying)

Primary firing uses high temperature to rapidly stop enzymes and evaporate moisture. Traditional charcoal primary firing runs at 110–120 °C; machine drying at 100–110 °C. It lasts 10–15 minutes, reducing moisture from 55–60% to 20–25%[4].

The key is “high heat, fast drying” — the temperature must be high enough to thoroughly deactivate PPO in a short time, preventing over-oxidation. At the same time, the heat drives off low-boiling green volatiles and triggers the Maillard reaction, forming pyrazines and furans that build the sweet, caramel base of Keemun aroma.

Cooling

After primary firing the leaves are dry outside but still moist inside. They are spread and cooled for 20–40 minutes so internal moisture migrates to the surface. Without this step, final firing would scorch the outside while trapping moisture inside, dulling the aroma.

Final firing (aroma lifting)

Final firing uses lower temperature to slowly lift aroma and finish drying. Traditional charcoal final firing is 85–95 °C; machine drying 80–90 °C. It lasts 20–30 minutes, bringing moisture down to 5–7%[4].

During final firing, residual terpenoid aroma compounds concentrate, and sugar–amino acid reactions continue, generating more pyran and pyrrole sweet-aroma substances. The strip also finishes setting, and the colour shifts from reddish-brown to the glossy black with golden tips — the signature appearance of Keemun congou.

Hand vs. machine

Keemun congou is literally “congou” — painstaking work — and historically every step was done by hand. Hand rolling lets the maker adjust pressure and rhythm to the leaf condition, producing tighter, finer strips with more visible tips. Hand drying (charcoal firing) allows minute fire adjustments that yield more delicate, layered aroma.

Since the late 20th century, mechanised lines have been introduced: withering troughs, rolling machines, fermentation rooms and chain-plate dryers. Machine tea is efficient and consistent, ideal for bulk export; yet the finest Keemun congou is still hand-finished, or at least hand-fired in the final stage, because the subtle temperature tuning and aroma judgement required for top grades remain difficult to automate[4].

Flavour and quality formation

Keemun’s flavour rests on four pillars:

  1. Theaflavins and thearubigins: formed during fermentation, governing liquor brightness and body;
  2. Amino acids and soluble sugars: accumulated during withering and fermentation, delivering sweetness and aftertaste;
  3. Terpenoid aroma compounds: Zhuye leaf is rich in geraniol and linalool precursors, which are released during fermentation and drying to create rose and orchid notes;
  4. Phenylacetaldehyde and pyrazines: products of enzymatic hydrolysis and Maillard reactions during fermentation and drying, contributing honey and baked sweetness.

Research shows that Keemun black tea contains significantly higher levels of geraniol and linalool than other congou black teas, and these correlate strongly with sensory scores for “floral aroma”. Phenylacetaldehyde, meanwhile, correlates with “honey aroma”[2]. This unique aroma signature makes Keemun instantly recognisable in blind tasting — “one sip and you know it’s Keemun”[1].

Grades and brewing

Under GB/T 13738.2-2017 Black tea — Part 2: Congou black tea and GH/T 117-2015 Keemun black tea, Keemun congou is divided into four grades: Special, Grade 1, Grade 2 and Grade 3[1][6]. Special grade demands tight, fine strips, glossy black colour with golden tips, bright red liquor, a high and fresh aroma (Keemun aroma prominent), and a mellow, sweet taste.

Water below 85 °C (185 °F) will not release Keemun’s aroma fully, and the cup will taste thin. Water too hot or too long a steep will bring out bitterness and damage the floral notes[6]. Keemun is excellent plain and also stands up to light milk or a twist of lemon — its aroma骨架 remains intact.
